Healthy Lunch Ideas
Traditional lunch options are often very heavy on the grains and wheat, so what are your healthier lunch options? Here’s 3 lunch options that we munch on in the Appleby household.
I use the following recipe as a guide and pretty much fill this frittata with whatever food I have in the fridge. I have been known to throw in chicken, sausage, steak, ham or bacon with cheese and any type of veg (even frozen). It’s so simple. I use butter at my fat source rather than coconut oil and I season with paprika and some dried herbs like rosemary or oregano. I find this recipe only feeds one person (we eat a lot in our household), so double it for 2, triple for 3 etc. It tastes great warm or straight from the fridge.
2. N&L Salad
This salad is like no other, and after 5 years of making it, I’m still not sick of it. Add BBQ chicken pieces, bacon, cheese (any type), boiled egg, avocado, cucumber, tomato, capsicum, lettuce, and generous amount of olive oil and season with seat salt and black pepper. This salad is filled with healthy fats and protein and will definitely give you the energy to get through your day.
Dinner leftovers. We try and cook up enough dinner so we have enough for lunch the next day. If we’ve had steak the night before, we will cut the leftover steak into strips that we then add to our N&L salad. Get creative with your leftovers.
